- 4 cups broccoli florets
- 2 cups red grapes, halved
- 1 large cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Wash and chop the broccoli florets into bite-sized pieces.
- In a large bowl, combine broccoli, halved grapes, sliced cucumber, red onion, and chopped mint.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
For a creamier version, add a dollop of Greek yogurt to the dressing.
