Description

A crisp and refreshing salad combining fresh broccoli, sweet grapes, and crunchy cucumber, perfect for a light summer meal.


Ingredients

  • 4 cups broccoli florets
  • 2 cups red grapes, halved
  • 1 large cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and chop the broccoli florets into bite-sized pieces.
  2. In a large bowl, combine broccoli, halved grapes, sliced cucumber, red onion, and chopped mint.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

For a creamier version, add a dollop of Greek yogurt to the dressing.
