Description

These Buckeye Brownie Bites are a decadent treat combining fudgy brownies with a creamy peanut butter center, perfect for chocolate lovers.


Ingredients

  • 1 box (18.3 oz) brownie mix
  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat oven to 350Β°F (175Β°C) and line a mini muffin tin with paper liners.
  2. Prepare brownie mix according to package instructions and fill each muffin cup about 3/4 full.
  3. Bake for 15-18 minutes or until a toothpick inserted comes out with fudgy crumbs. Let cool completely.
  4. In a bowl, mix peanut butter, butter, powdered sugar, and vanilla until smooth to form the filling.
  5. Scoop the peanut butter mixture into small balls and press into the center of each cooled brownie bite.
  6. In a microwave-safe bowl, melt chocolate chips and oil, stirring every 30 seconds until smooth.
  7. Dip the tops of the filled brownie bites into the melted chocolate and let set on a wire rack.

Notes

For best results, store in an airtight container in the refrigerator for up to 5 days. These can be frozen for up to a month.
