These Buckeye Brownie Bites are a decadent treat combining fudgy brownies with a creamy peanut butter center, perfect for chocolate lovers.

- 1 box (18.3 oz) brownie mix
- 1/2 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 tablespoon vegetable oil
Instructions
- Preheat oven to 350Β°F (175Β°C) and line a mini muffin tin with paper liners.
- Prepare brownie mix according to package instructions and fill each muffin cup about 3/4 full.
- Bake for 15-18 minutes or until a toothpick inserted comes out with fudgy crumbs. Let cool completely.
- In a bowl, mix peanut butter, butter, powdered sugar, and vanilla until smooth to form the filling.
- Scoop the peanut butter mixture into small balls and press into the center of each cooled brownie bite.
- In a microwave-safe bowl, melt chocolate chips and oil, stirring every 30 seconds until smooth.
- Dip the tops of the filled brownie bites into the melted chocolate and let set on a wire rack.
Notes
For best results, store in an airtight container in the refrigerator for up to 5 days. These can be frozen for up to a month.
