Instructions
- Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.
- In another bowl, beat the eggs, oil, and sugar until well combined.
- Stir in the grated carrots, zucchini, and apple into the wet mixture.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
- Allow muffins to cool completely before frosting.
- For the frosting: Beat cream cheese and butter until smooth, then add powdered sugar and vanilla, and mix until creamy.
- Spread the frosting on the cooled muffins and serve.
Notes
These muffins are best stored in an airtight container in the refrigerator for up to 5 days. For a healthier option, substitute half the oil with applesauce.
