  • For the frosting: 8 ounces cream cheese, softened

  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In another bowl, beat the eggs, oil, and sugar until well combined.
  4. Stir in the grated carrots, zucchini, and apple into the wet mixture.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  8. Allow muffins to cool completely before frosting.
  9. For the frosting: Beat cream cheese and butter until smooth, then add powdered sugar and vanilla, and mix until creamy.
  10. Spread the frosting on the cooled muffins and serve.

Notes

These muffins are best stored in an airtight container in the refrigerator for up to 5 days. For a healthier option, substitute half the oil with applesauce.
