- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
- 1 cup shredded sharp cheddar cheese
- For the Garlic Butter Sauce:
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup chicken broth
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley
Instructions
- Season the chicken breasts on both sides with salt, pepper, and garlic powder.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and sear for 4-5 minutes per side until golden brown.
- Preheat broiler to high. Top each chicken breast with 1/4 cup of shredded cheddar cheese. Place the skillet under the broiler for 2-3 minutes until the cheese is melted and bubbly.
- Meanwhile, in a small saucepan over medium heat, melt the butter. Add the minced garlic and cook for 1 minute until fragrant.
- Stir in the chicken broth and lemon juice. Let simmer for 2-3 minutes until slightly thickened. Remove from heat and stir in parsley.
- Pour the garlic butter sauce over the cheesy chicken breasts. Serve immediately.
Notes
For a lower-calorie option, use reduced-fat cheddar cheese and substitute half the butter with olive oil.
