Ingredients

  • 1 pound ground beef
  • 1 cup shredded cheddar cheese
  • 1/2 cup onion, diced
  • 1/2 cup bell pepper, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 large flour tortillas
  • Oil for frying

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes.
  2. Add diced onion, bell pepper, garlic powder, cumin, salt, and pepper; cook for another 5 minutes until vegetables are soft.
  3. Stir in shredded cheddar cheese until melted and combined.
  4. Spoon the beef mixture onto the center of each tortilla. Fold in the sides and roll up tightly.
  5. Heat oil in a deep fryer or large pot to 375Β°F (190Β°C).
  6. Fry the chimichangas in batches until golden brown and crispy, about 2-3 minutes per side.
  7. Drain on paper towels and serve hot with your favorite toppings.

Notes

For a healthier option, bake in the oven at 400Β°F for 20-25 minutes instead of frying.
