- 1 pound ground beef
- 1 cup shredded cheddar cheese
- 1/2 cup onion, diced
- 1/2 cup bell pepper, diced
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 8 large flour tortillas
- Oil for frying
Instructions
- In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes.
- Add diced onion, bell pepper, garlic powder, cumin, salt, and pepper; cook for another 5 minutes until vegetables are soft.
- Stir in shredded cheddar cheese until melted and combined.
- Spoon the beef mixture onto the center of each tortilla. Fold in the sides and roll up tightly.
- Heat oil in a deep fryer or large pot to 375Β°F (190Β°C).
- Fry the chimichangas in batches until golden brown and crispy, about 2-3 minutes per side.
- Drain on paper towels and serve hot with your favorite toppings.
Notes
For a healthier option, bake in the oven at 400Β°F for 20-25 minutes instead of frying.
