Instructions
- Preheat your oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
- In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- In a separate bowl, beat the cream cheese and powdered sugar until smooth, then fold in the cherry preserves and chopped cherries.
- Scoop about 1 tablespoon of cookie dough, flatten it, add a teaspoon of the cheesecake mixture in the center, and wrap the dough around it to form a ball.
- Place the stuffed dough balls on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
