Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup cherry preserves
  • 1 cup fresh cherries, pitted and chopped

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
  3. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. In a separate bowl, beat the cream cheese and powdered sugar until smooth, then fold in the cherry preserves and chopped cherries.
  7. Scoop about 1 tablespoon of cookie dough, flatten it, add a teaspoon of the cheesecake mixture in the center, and wrap the dough around it to form a ball.
  8. Place the stuffed dough balls on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
