Description

A satisfying bowl of roasted sweet potatoes and seasoned chicken, topped with a creamy, tangy lemon feta sauce and a sweet-spicy chili honey drizzle. Perfect for a healthy weeknight dinner.

  • For the Chicken & Sweet Potatoes:
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 large sweet potatoes, cubed (about 1 lb)
  • 2 tbsp olive oil, divided
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For the Lemon Feta Sauce:
  • 4 oz crumbled feta cheese
  • 1/2 cup plain Greek yogurt
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • 23 tbsp water (to thin)
  • Salt and pepper to taste
  • For the Chili Honey:
  • 3 tbsp honey
  • 1 tsp chili powder or 1/2 tsp red pepper flakes
  • 1 tbsp apple cider vinegar
  • Pinch of salt
  • For Serving:
  • Fresh parsley, chopped
  • Lemon wedges

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss sweet potato cubes with 1 tbsp olive oil, half of the paprika, garlic powder, oregano, salt, and pepper. Spread on a baking sheet in a single layer.
  3. Roast sweet potatoes for 20 minutes.
  4. Meanwhile, in a bowl, toss chicken pieces with remaining olive oil and spices.
  5. After sweet potatoes have roasted for 20 minutes, push them to one side of the sheet, add chicken to the other side, and roast for 15 more minutes, or until chicken is cooked through and sweet potatoes are tender.
  6. While roasting, make the lemon feta sauce: combine feta, Greek yogurt, lemon juice, garlic, and 2 tbsp water in a blender or food processor. Blend until smooth, adding more water as needed. Season with salt and pepper.
  7. Make the chili honey: whisk honey, chili powder, apple cider vinegar, and salt in a small bowl. If too thick, microwave for 10 seconds.
  8. To serve, divide roasted sweet potatoes and chicken among bowls. Drizzle with lemon feta sauce and chili honey. Garnish with parsley and lemon wedges.

Notes

If you prefer a dairy-free sauce, substitute with blended silken tofu and lemon juice. The chili honey can be made spicier by adding more red pepper flakes. For a weeknight shortcut, use rotisserie chicken and roasted sweet potatoes.
