Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 3 medium zucchinis, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375Β°F (190Β°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautΓ© until softened.
  3. Add sliced zucchinis and cook for 5 minutes until slightly tender.
  4. Season the chicken breasts with salt and pepper, then place them in a baking dish.
  5. Top the chicken with the zucchini mixture and sprinkle shredded cheese on top.
  6. Bake in the preheated oven for 25-30 minutes or until chicken is cooked through and cheese is bubbly.
  7. Let cool for 5 minutes before serving.
