- 2 boneless, skinless chicken breasts (about 1 pound)
- 3 medium zucchinis, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375Β°F (190Β°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautΓ© until softened.
- Add sliced zucchinis and cook for 5 minutes until slightly tender.
- Season the chicken breasts with salt and pepper, then place them in a baking dish.
- Top the chicken with the zucchini mixture and sprinkle shredded cheese on top.
- Bake in the preheated oven for 25-30 minutes or until chicken is cooked through and cheese is bubbly.
- Let cool for 5 minutes before serving.
