Description

These muffins combine the rich flavors of chocolate and cranberries with hearty oats for a delightful morning treat.


Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup dried cranberries
  • 1/2 cup chocolate chips
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup honey

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the oats, flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the milk, oil, eggs, vanilla extract, and honey until well combined.
  4. Stir the wet ingredients into the dry ingredients until just moistened, then fold in the cranberries and chocolate chips.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a healthier option, substitute half the flour with whole wheat flour. Store in an airtight container for up to 3 days.
