- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup dried cranberries
- 1/2 cup chocolate chips
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup honey
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the oats, flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the milk, oil, eggs, vanilla extract, and honey until well combined.
- Stir the wet ingredients into the dry ingredients until just moistened, then fold in the cranberries and chocolate chips.
- Divide the batter evenly among the muffin cups.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For a healthier option, substitute half the flour with whole wheat flour. Store in an airtight container for up to 3 days.
