Description

A traditional holiday dish featuring baked chicken with savory dressing.


Ingredients

  • 1 whole chicken (about 45 pounds)
  • 1 cup celery, chopped
  • 1 cup onion, diced
  • 8 cups bread cubes
  • 1/2 cup butter
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350Β°F (175Β°C).
  2. In a large skillet, melt butter over medium heat. Add celery and onion, cooking until softened.
  3. In a large bowl, combine bread cubes with the celery and onion mixture. Pour in chicken broth and mix well; season with salt and pepper.
  4. Stuff the chicken cavity with the dressing mixture and place any extra in a baking dish.
  5. Roast the chicken in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165Β°F (74Β°C).
  6. Let rest for 10 minutes before carving and serving.

Notes

For a moist dressing, add more broth if needed. This recipe pairs well with cranberry sauce.
