- 1/2 cup light corn syrup
- 1/4 cup water
- 2 egg whites
- 1/8 teaspoon salt
- 1 teaspoon vanilla extract
- 3 ounces flavored gelatin (Jello) in various colors, divided
Instructions
- In a saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring constantly until sugar dissolves.
- Continue cooking without stirring until the mixture reaches 260Β°F (hard-ball stage) on a candy thermometer.
- While the syrup is cooking, beat egg whites and salt until stiff peaks form.
- Gradually pour the hot syrup into the beaten egg whites, beating constantly.
- Add vanilla extract and beat until the mixture holds its shape and becomes thick.
- Divide the mixture into separate bowls and stir in different colored gelatin into each bowl.
- Drop spoonfuls of the colored mixtures onto waxed paper to form candies, alternating colors for a swirled effect.
- Allow the candies to set at room temperature for several hours or until firm.
Notes
For best results, use a stand mixer and work quickly with the hot syrup. Store in an airtight container to maintain freshness.
