Instructions
- In a bowl, mix cream cheese and 2 tablespoons sugar until smooth.
- Spread the cream cheese mixture on 4 slices of bread and top with the remaining slices to make sandwiches.
- In a shallow dish, whisk together eggs, milk, vanilla extract, and cinnamon.
- Dip each sandwich into the egg mixture, coating both sides.
- Cook the sandwiches on a greased griddle over medium heat for 3-4 minutes per side until golden brown.
- For the compote, combine blackberries, 1/4 cup sugar, and lemon juice in a saucepan.
- Cook over medium heat for 5-7 minutes, stirring occasionally, until the berries break down and form a sauce.
- Serve the French toast topped with blackberry compote.

For a healthier option, use low-fat cream cheese and whole grain bread. Ensure the compote is cooled slightly before serving to avoid burning.
