Ingredients

  • 8 slices of thick bread
  • 4 ounces cream cheese, softened
  • 2 tablespoons sugar
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 2 cups fresh blackberries
  • 1/4 cup sugar for compote
  • 1 tablespoon lemon juice

Instructions

  1. In a bowl, mix cream cheese and 2 tablespoons sugar until smooth.
  2. Spread the cream cheese mixture on 4 slices of bread and top with the remaining slices to make sandwiches.
  3. In a shallow dish, whisk together eggs, milk, vanilla extract, and cinnamon.
  4. Dip each sandwich into the egg mixture, coating both sides.
  5. Cook the sandwiches on a greased griddle over medium heat for 3-4 minutes per side until golden brown.
  6. For the compote, combine blackberries, 1/4 cup sugar, and lemon juice in a saucepan.
  7. Cook over medium heat for 5-7 minutes, stirring occasionally, until the berries break down and form a sauce.
  8. Serve the French toast topped with blackberry compote.

Notes

For a healthier option, use low-fat cream cheese and whole grain bread. Ensure the compote is cooled slightly before serving to avoid burning.
