Ingredients
- Bacon: 4 slices, diced
- Chicken: 1.5 lbs boneless skinless thighs, cut into bite-sized pieces
- Onions: 2 large sweet onions, thinly sliced
- Fire-roasted peppers: 1 cup (from jar or fresh, roasted and diced)
- Butter: 2 tablespoons
- All-purpose flour: 2 tablespoons
- Chicken broth: 1 cup
- Sour cream: 1/2 cup
- Heavy cream: 1/2 cup
- Dijon mustard: 1 tablespoon
- Worcestershire sauce: 1 teaspoon
- Paprika: 1 teaspoon
- Salt and pepper to taste
- Fresh parsley for garnish
- Egg noodles or rice for serving
Instructions
- 1. In a large skillet, cook the diced bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving the rendered fat in the pan.
- 2. Season the chicken pieces with salt, pepper, and paprika. In the same skillet, brown the chicken in the bacon fat over medium-high heat until golden on all sides (about 5-7 minutes). Remove and set aside.
- 3. Reduce heat to medium. Add the sliced sweet onions to the skillet. Cook, stirring occasionally, until deeply caramelized (about 15-20 minutes). Add a splash of broth if they start to stick.
- 4. Stir in the diced fire-roasted peppers and cook for 2 minutes.
- 5. Push the onions and peppers to the side, add butter to the empty space. Once melted, whisk in the flour and cook for 1 minute to form a roux.
- 6. Gradually pour in the chicken broth, whisking constantly. Bring to a simmer and cook for 2 minutes until thickened.
- 7. Reduce heat to low. Stir in the sour cream, heavy cream, Dijon mustard, Worcestershire sauce, and cooked bacon. Mix until smooth.
- 8. Return the chicken to the skillet along with any accumulated juices. Simmer gently for 5 minutes until the chicken is cooked through and the sauce is creamy.
- 9. Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley. Serve over egg noodles or rice.
Notes
For a smoky flavor, use smoked paprika. You can substitute Greek yogurt for sour cream to lighten the recipe. If you prefer, use chicken breasts instead of thighs, but reduce cooking time.
