Description
These creamy garlic mushroom chicken thighs are a one-pan comfort meal with tender chicken in a rich garlic mushroom sauce.

- 4 boneless skinless chicken thighs
- 2 tbsp olive oil
- 8 oz mushrooms sliced
- 4 cloves garlic minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup Parmesan cheese grated
- 1 tsp dried thyme
- salt and pepper to taste
Instructions
- Season chicken thighs with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown, about 5 minutes per side. Remove and set aside.
- In the same skillet, add mushrooms and garlic. Cook until mushrooms are tender, about 5 minutes.
- Pour in heavy cream and chicken broth, stirring to scrape up browned bits. Add Parmesan and thyme. Simmer until sauce thickens, about 5 minutes.
- Return chicken to skillet, spoon sauce over. Cook for another 5 minutes until chicken is cooked through. Serve hot.
Notes
For a lighter version, use half-and-half instead of heavy cream.
