Description
A rich and creamy soup made with fresh mushrooms.
Ingredients
Scale
- 500g mushrooms, sliced
- 1 onion, chopped
- 2 garlic cloves, minced
- 500ml vegetable stock
- 200ml double cream
Instructions
- Heat oil in a pan.
- Add onion and garlic, cook until soft.
- Add mushrooms and stock, simmer.
- Blend until smooth.
- Stir in cream and serve.
Notes
For a vegan version, use coconut cream.
