Ingredients

  • 1 lb Italian sausage
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 cups potatoes, diced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Optional: Red pepper flakes for heat

Instructions

  1. In a large pot, brown the Italian sausage over medium heat, breaking it up with a spoon, until fully cooked. Drain excess fat if needed.
  2. Add the diced onion and minced garlic to the pot. Cook until the onion is translucent, about 5 minutes.
  3. Stir in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  4. Reduce heat to low and stir in the heavy cream and grated Parmesan cheese until the soup is creamy and well combined.
  5. Add the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes if desired.
  6. Serve hot, garnished with extra Parmesan if desired.

Notes

This soup can be made spicier by adding more red pepper flakes. Store leftovers in the refrigerator for up to 3 days.
