- 1 lb Italian sausage
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 2 cups potatoes, diced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper to taste
- Optional: Red pepper flakes for heat
Instructions
- In a large pot, brown the Italian sausage over medium heat, breaking it up with a spoon, until fully cooked. Drain excess fat if needed.
- Add the diced onion and minced garlic to the pot. Cook until the onion is translucent, about 5 minutes.
- Stir in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- Reduce heat to low and stir in the heavy cream and grated Parmesan cheese until the soup is creamy and well combined.
- Add the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes if desired.
- Serve hot, garnished with extra Parmesan if desired.
Notes
This soup can be made spicier by adding more red pepper flakes. Store leftovers in the refrigerator for up to 3 days.
