A delightful spring dessert featuring creamy layers of rhubarb and cream cheese in bar form.


Ingredients

  • Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • Filling:
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups fresh rhubarb, chopped
  • 1/4 cup sugar (for rhubarb mixture)
  • 1 tablespoon cornstarch

Instructions

  1. Preheat oven to 350Β°F (175Β°C) and grease a 9×13 inch baking dish.
  2. In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish.
  3. Bake the crust for 10 minutes, then remove from oven and let cool slightly.
  4. In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add egg and vanilla extract, and mix until combined.
  5. In a separate bowl, toss chopped rhubarb with 1/4 cup sugar and cornstarch.
  6. Spread the cream cheese mixture over the cooled crust, then top with the rhubarb mixture.
  7. Bake for 30-35 minutes or until set. Let cool completely before slicing into bars.

Notes

These bars are best served chilled and can be stored in an airtight container in the refrigerator for up to 3 days.
