- For the Chicken:
- 1.5 lbs boneless skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
- For the Rice and Sauce:
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 can (10.5 oz) condensed cream of chicken soup
- 1/2 cup sour cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon onion powder
- For the Herb-Parmesan Topping:
- 1/4 cup grated Parmesan cheese
- 2 tablespoons breadcrumbs
- 1 tablespoon chopped fresh parsley
- 1 teaspoon dried basil
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Prepare the chicken: Season chicken pieces with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through, about 6-8 minutes. Remove and set aside.
- Prepare the rice mixture: In a large bowl, combine uncooked rice, chicken broth, heavy cream, condensed soup, sour cream, mozzarella, 1/2 cup Parmesan, thyme, rosemary, and onion powder. Mix well.
- Pour the rice mixture into the prepared baking dish. Arrange the cooked chicken pieces over the top, pressing lightly into the rice mixture.
- Cover tightly with foil and bake for 40 minutes.
- While baking, prepare the topping: In a small bowl, mix 1/4 cup Parmesan, breadcrumbs, parsley, and basil.
- After 40 minutes, remove foil. Sprinkle the topping evenly over the casserole. Return to oven, uncovered, and bake for an additional 10-15 minutes until golden and bubbly.
- Let rest for 5 minutes before serving. Garnish with additional fresh parsley if desired.
Notes
For best results, use freshly grated Parmesan cheese. To make ahead, assemble the casserole (without the topping) and refrigerate. Add 10 minutes to the covered baking time. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
