  • 2 tablespoons olive oil
  • For the Whipped Brie:
  • 8 oz brie cheese, rind removed, at room temperature
  • 3 tablespoons cream cheese, softened
  • 1 tablespoon honey
  • 1/4 teaspoon black pepper
  • For the Roasted Strawberries:
  • 2 cups fresh strawberries, hulled and halved
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon maple syrup
  • For the Pistachio Crunch:
  • 1/3 cup shelled pistachios, roughly chopped
  • For Assembly:
  • 2 tablespoons balsamic glaze (store-bought or homemade)
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the roasted strawberries: On a small baking sheet, toss halved strawberries with balsamic vinegar and maple syrup. Roast for 15–20 minutes until softened and slightly caramelized. Set aside.
  3. Make the whipped brie: In a food processor, combine brie, cream cheese, honey, and black pepper. Pulse until smooth and creamy. Transfer to a bowl.
  4. Assemble the flatbread: Brush flatbread with olive oil and place on a baking sheet. Bake for 5–7 minutes until edges are golden and crisp.
  5. Spread whipped brie evenly over hot flatbread.
  6. Top with roasted strawberries, sprinkle with chopped pistachios.
  7. Drizzle balsamic glaze over the top.
  8. Garnish with fresh basil if desired. Serve immediately.

Notes

For a gluten-free option, use a gluten-free flatbread. The whipped brie can be made a day ahead and refrigerated; bring to room temperature before using.
