- For the Flatbread:
- 1 pound pizza dough, at room temperature
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- For the Whipped Goat Cheese:
- 4 ounces goat cheese, softened
- 2 ounces cream cheese, softened
- 2 tablespoons honey
- 1/4 cup heavy cream
- For the Blackberry Compote:
- 2 cups fresh or frozen blackberries
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- For Assembly:
- 1/4 cup roasted salted pistachios, chopped
- 2 tablespoons honey balsamic glaze
- Fresh mint or basil for garnish (optional)
Instructions
- Preheat oven to 450°F (230°C). If using a pizza stone, place it in the oven to heat.
- Roll out the pizza dough on a floured surface into a large rectangle or oval, about 1/4-inch thick. Transfer to a parchment-lined baking sheet or a floured pizza peel.
- Brush the dough with olive oil and sprinkle evenly with garlic powder and salt.
- Bake flatbread for 10-12 minutes until golden brown and crispy. Let cool slightly.
- While flatbread bakes, make the whipped goat cheese: In a medium bowl, combine goat cheese, cream cheese, honey, and heavy cream. Beat with an electric mixer until smooth and fluffy. Set aside.
- Make the blackberry compote: In a small saucepan over medium heat, combine blackberries, sugar, lemon juice, and vanilla. Cook, stirring occasionally, until berries break down and mixture thickens, about 8-10 minutes. Remove from heat and let cool slightly.
- Spread the whipped goat cheese evenly over the cooled flatbread.
- Spoon the blackberry compote over the goat cheese.
- Sprinkle with chopped pistachios.
- Drizzle with honey balsamic glaze.
- Garnish with fresh mint or basil if desired. Slice and serve.
Notes
If you don’t have honey balsamic glaze, you can make your own by simmering 1/2 cup balsamic vinegar with 2 tablespoons honey until reduced by half. The flatbread can be served warm or at room temperature.
