Description

A crispy flatbread topped with creamy whipped goat cheese, sweet-tart blackberry compote, crunchy pistachios, and a drizzle of honey balsamic glaze. Perfect as an appetizer or light meal.

  • For the Flatbread:
  • 1 pound pizza dough, at room temperature
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • For the Whipped Goat Cheese:
  • 4 ounces goat cheese, softened
  • 2 ounces cream cheese, softened
  • 2 tablespoons honey
  • 1/4 cup heavy cream
  • For the Blackberry Compote:
  • 2 cups fresh or frozen blackberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • For Assembly:
  • 1/4 cup roasted salted pistachios, chopped
  • 2 tablespoons honey balsamic glaze
  • Fresh mint or basil for garnish (optional)

Instructions

  1. Preheat oven to 450°F (230°C). If using a pizza stone, place it in the oven to heat.
  2. Roll out the pizza dough on a floured surface into a large rectangle or oval, about 1/4-inch thick. Transfer to a parchment-lined baking sheet or a floured pizza peel.
  3. Brush the dough with olive oil and sprinkle evenly with garlic powder and salt.
  4. Bake flatbread for 10-12 minutes until golden brown and crispy. Let cool slightly.
  5. While flatbread bakes, make the whipped goat cheese: In a medium bowl, combine goat cheese, cream cheese, honey, and heavy cream. Beat with an electric mixer until smooth and fluffy. Set aside.
  6. Make the blackberry compote: In a small saucepan over medium heat, combine blackberries, sugar, lemon juice, and vanilla. Cook, stirring occasionally, until berries break down and mixture thickens, about 8-10 minutes. Remove from heat and let cool slightly.
  7. Spread the whipped goat cheese evenly over the cooled flatbread.
  8. Spoon the blackberry compote over the goat cheese.
  9. Sprinkle with chopped pistachios.
  10. Drizzle with honey balsamic glaze.
  11. Garnish with fresh mint or basil if desired. Slice and serve.

Notes

If you don’t have honey balsamic glaze, you can make your own by simmering 1/2 cup balsamic vinegar with 2 tablespoons honey until reduced by half. The flatbread can be served warm or at room temperature.
