Crispy, savory sweet potato fritters topped with creamy whipped ricotta, a drizzle of honey, and crunchy pistachios. Perfect appetizer or side dish.


Ingredients

  • 2 large sweet potatoes, peeled and grated
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 2 large eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh chives
  • Vegetable oil for frying
  • For the whipped ricotta:
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For serving:
  • Honey for drizzling
  • 1/4 cup chopped pistachios
  • Flaky sea salt

Instructions

  1. 1. Prepare the fritters: In a large bowl, combine grated sweet potatoes, flour, cornstarch, beaten eggs, salt, pepper, and chives. Mix well until evenly coated.
  2. 2. Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Once hot, drop spoonfuls of the mixture into the oil, flattening slightly. Fry for 2-3 minutes per side until golden and crispy. Drain on paper towels.
  3. 3. Make the whipped ricotta: In a food processor, combine ricotta, honey, vanilla, and salt. Process until smooth and creamy.
  4. 4. To serve: Spread a dollop of whipped ricotta on each fritter. Drizzle with honey and sprinkle with chopped pistachios and flaky sea salt.

Notes

You can bake the fritters at 400°F for 15-20 minutes for a lighter version. The whipped ricotta can be made ahead and refrigerated.
