Crispy Sweet Potato Smash with Melted Brie, Cranberries & Spicy Honey Walnut

Description

A perfect side dish or appetizer: roasted sweet potatoes are smashed and topped with creamy melted brie, tart dried cranberries, and a spicy honey walnut crunch. Savory, sweet, and spicy all in one bite.


Ingredients

  • For the Sweet Potatoes:
  • 4 medium sweet potatoes, scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • For the Topping:
  • 4 ounces Brie cheese, sliced into small pieces
  • 1/3 cup dried cranberries
  • 1/2 cup walnut halves
  • 2 tablespoons honey
  • 1/4 teaspoon cayenne pepper (or to taste)
  • Pinch of flaky sea salt for finishing

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Place sweet potatoes on the baking sheet and prick each a few times with a fork. Roast for 45-60 minutes until very tender when pierced.
  3. Remove from oven and let cool just enough to handle. Increase oven temperature to 450°F (230°C).
  4. Using the bottom of a glass or a potato masher, gently press each sweet potato to flatten into a disc about 1/2-inch thick. Brush with olive oil and sprinkle with salt, pepper, and smoked paprika.
  5. Return to oven and roast for 10 minutes, then flip carefully and roast another 10 minutes until edges are crispy.
  6. While potatoes bake, prepare the walnut topping: In a small skillet over medium heat, toast walnut halves until fragrant, about 3-4 minutes. Add honey and cayenne, stir to coat, and cook 1 minute more. Remove from heat and let cool slightly.
  7. Remove sweet potato discs from oven. Immediately top each with pieces of Brie cheese and a sprinkle of dried cranberries. Return to oven for 2-3 minutes until Brie is melted.
  8. Transfer to a serving platter. Top with spicy honey walnuts and a pinch of flaky sea salt. Serve hot.

Notes

You can substitute the Brie with Camembert or even a soft goat cheese. For a milder heat, reduce the cayenne to 1/8 teaspoon. The sweet potatoes can be roasted a day ahead and smashed just before serving; simply reheat in the oven before adding toppings.
