- 2 pounds boneless chicken breasts
- 1 pound pasta (such as penne or rotini)
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 4 garlic cloves, minced
- 1 onion, diced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- 2 cups chicken broth
- 1/2 cup grated Parmesan cheese
Instructions
- Place the chicken breasts at the bottom of the crock pot.
- Add the diced onion, minced garlic, sun-dried tomatoes, Italian seasoning, red pepper flakes, salt, and pepper.
- Pour in the chicken broth and heavy cream, then stir to combine.
- Add the pasta on top, making sure it's submerged in the liquid.
- Cover and cook on low for 4-6 hours, or until chicken is tender and pasta is cooked.
- Shred the chicken with forks, then stir in the Parmesan cheese.
- Serve hot and enjoy.
Notes
For a creamier texture, add more heavy cream if needed. This recipe pairs well with garlic bread.
