Description

A creamy and flavorful pasta dish featuring chicken cooked slowly in a crock pot with rich flavors from sun-dried tomatoes and garlic.


Ingredients

  • 2 pounds boneless chicken breasts
  • 1 pound pasta (such as penne or rotini)
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 garlic cloves, minced
  • 1 onion, diced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Place the chicken breasts at the bottom of the crock pot.
  2. Add the diced onion, minced garlic, sun-dried tomatoes, Italian seasoning, red pepper flakes, salt, and pepper.
  3. Pour in the chicken broth and heavy cream, then stir to combine.
  4. Add the pasta on top, making sure it's submerged in the liquid.
  5. Cover and cook on low for 4-6 hours, or until chicken is tender and pasta is cooked.
  6. Shred the chicken with forks, then stir in the Parmesan cheese.
  7. Serve hot and enjoy.

Notes

For a creamier texture, add more heavy cream if needed. This recipe pairs well with garlic bread.
