Description
This crustless spinach and feta quiche is loaded with spinach, onion, feta cheese, and sharp Cheddar cheese. It is easy to prepare and makes a perfect breakfast, brunch, or light dinner.

- 1 tablespoon butter
- 1 onion, chopped
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- 6 eggs
- 1 (4 ounce) package feta cheese, crumbled
- 1 cup shredded Cheddar cheese
- salt and ground black pepper to taste
Instructions
- Preheat the oven to 375 degrees F (190 degrees C).
- Melt butter in a large skillet over medium heat. Add onion and cook until soft and translucent, about 5 minutes. Stir in chopped spinach and cook until warmed through, about 2 minutes. Remove from heat.
- Whisk eggs in a large bowl. Add the spinach mixture, feta cheese, and Cheddar cheese; season with salt and ground black pepper. Stir until well combined.
- Pour the mixture into a 9-inch pie plate.
- Bake in the preheated oven until the eggs are set and the top is golden brown, 30 to 35 minutes. Let stand for 5 minutes before cutting.
Notes
For best results, squeeze excess moisture from the thawed spinach before adding it to the skillet. This quiche may be enjoyed warm, at room temperature, or cold.
