Description

A decadent cheesecake featuring layers of chocolate, cherries, and cream cheese.


Ingredients

  • For the crust: 1 1/2 cups chocolate cookie crumbs
  • For the crust: 1/4 cup unsalted butter, melted
  • For the filling: 24 oz cream cheese, softened
  • For the filling: 1 cup granulated sugar
  • For the filling: 3 large eggs
  • For the filling: 1 tsp vanilla extract
  • For the filling: 1 cup sour cream
  • For the cherry layer: 2 cups pitted cherries, fresh or canned
  • For the cherry layer: 1/4 cup cherry liqueur
  • For the topping: 1 cup whipped cream
  • For the topping: 1/2 cup chocolate shavings

Instructions

  1. Preheat oven to 325Β°F and grease a 9-inch springform pan.
  2. Mix cookie crumbs and melted butter; press into the bottom of the pan.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In a large bowl, beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, then mix in vanilla and sour cream.
  6. Pour half the filling over the crust.
  7. Layer cherries mixed with liqueur on top of the filling.
  8. Add the remaining filling and smooth the top.
  9. Bake for 60-70 minutes until set; cool in the oven with the door ajar.
  10. Refrigerate for at least 4 hours before topping with whipped cream and chocolate shavings.

Notes

Ensure cherries are well-drained if using canned for the best texture. Chill thoroughly before serving.
