A decadent cheesecake featuring layers of chocolate, cherries, and cream cheese.
Ingredients
- For the crust: 1 1/2 cups chocolate cookie crumbs
- For the crust: 1/4 cup unsalted butter, melted
- For the filling: 24 oz cream cheese, softened
- For the filling: 1 cup granulated sugar
- For the filling: 3 large eggs
- For the filling: 1 tsp vanilla extract
- For the filling: 1 cup sour cream
- For the cherry layer: 2 cups pitted cherries, fresh or canned
- For the cherry layer: 1/4 cup cherry liqueur

Instructions
- Preheat oven to 325Β°F and grease a 9-inch springform pan.
- Mix cookie crumbs and melted butter; press into the bottom of the pan.
- Bake the crust for 10 minutes, then let it cool.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, then mix in vanilla and sour cream.
- Pour half the filling over the crust.
- Layer cherries mixed with liqueur on top of the filling.
- Add the remaining filling and smooth the top.
- Bake for 60-70 minutes until set; cool in the oven with the door ajar.
- Refrigerate for at least 4 hours before topping with whipped cream and chocolate shavings.
Notes
Ensure cherries are well-drained if using canned for the best texture. Chill thoroughly before serving.
