- 8 ounces high-quality dark chocolate, chopped
- 4 large eggs, separated
- 1/2 cup granulated sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- 1. Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Set aside to cool slightly.
- 2. In a separate bowl, beat the egg yolks with the sugar until pale and thick.
- 3. Gradually fold the melted chocolate into the egg yolk mixture.
- 4. In another bowl, whip the egg whites with a pinch of salt until stiff peaks form.
- 5. Gently fold the whipped egg whites into the chocolate mixture.
- 6. In a clean bowl, whip the heavy cream and vanilla extract until soft peaks form, then fold into the batter.
- 7. Pour the mixture into a prepared cake pan and refrigerate for at least 4 hours or until set.
- 8. Serve chilled, garnished with whipped cream or chocolate shavings if desired.
