- 1 pound boneless, skinless chicken breasts, cubed
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon dried thyme
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the cubed chicken and cook until browned on all sides, about 5 minutes.
- Stir in the chopped onion and minced garlic, cooking until softened, about 3 minutes.
- Add the uncooked rice and chicken broth, bringing the mixture to a boil.

- Stir in the heavy cream, salt, pepper, and dried thyme, and cook for an additional 5 minutes until creamy.
Notes
For a lighter version, substitute heavy cream with half-and-half or milk.
