Ingredients

  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried thyme

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the cubed chicken and cook until browned on all sides, about 5 minutes.
  3. Stir in the chopped onion and minced garlic, cooking until softened, about 3 minutes.
  4. Add the uncooked rice and chicken broth, bringing the mixture to a boil.
  5. Reduce heat to low, cover, and simmer for 20 minutes or until rice is tender.
  6. Stir in the heavy cream, salt, pepper, and dried thyme, and cook for an additional 5 minutes until creamy.

Notes

For a lighter version, substitute heavy cream with half-and-half or milk.
