Description

Ingredients

  • 1 pound ground beef
  • 2 cups uncooked elbow macaroni
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup milk
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups shredded cheddar cheese
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the ground beef over medium heat until no longer pink; drain excess fat.
  2. Add the chopped onion and garlic to the skillet and cook until softened, about 3 minutes.
  3. Stir in the uncooked elbow macaroni, beef broth, milk, diced tomatoes, paprika, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes or until the pasta is tender.
  5. Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
  6. Let it sit for 5 minutes before serving to thicken.

Notes

For a healthier twist, use lean ground beef and whole wheat pasta. This recipe can be doubled for larger families.
