- 1 pound ground beef
- 2 cups uncooked elbow macaroni
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup milk
- 1 can (14.5 oz) diced tomatoes
- 2 cups shredded cheddar cheese
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large skillet, brown the ground beef over medium heat until no longer pink; drain excess fat.
- Add the chopped onion and garlic to the skillet and cook until softened, about 3 minutes.
- Stir in the uncooked elbow macaroni, beef broth, milk, diced tomatoes, paprika, salt, and pepper.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes or until the pasta is tender.
- Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
- Let it sit for 5 minutes before serving to thicken.
Notes
For a healthier twist, use lean ground beef and whole wheat pasta. This recipe can be doubled for larger families.
