These easy red velvet brownies feature layers of rich chocolate brownie infused with red velvet flavor and a creamy cheesecake middle, perfect for a decadent dessert.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese (softened)
  • 1/4 cup granulated sugar (for cheesecake layer)
  • 1 large egg (for cheesecake layer)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a separate large bowl, mix the melted butter and 1 cup sugar until combined. Add 2 eggs, red food coloring, and vanilla extract, then stir in the dry ingredients until just combined.
  4. In another bowl, beat the cream cheese and 1/4 cup sugar until smooth, then add 1 egg and mix well.
  5. Pour half of the brownie batter into the prepared pan. Spread the cheesecake mixture evenly over the batter, then top with the remaining brownie batter.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely before cutting into squares.

Notes

For best results, chill the brownies in the refrigerator for at least 1 hour before serving. Store leftovers in an airtight container.
