Ingredients

  • 1 pound kielbasa sausage, sliced into 1/2-inch rounds
  • 2 medium potatoes, diced into 1-inch pieces
  • 1 bell pepper, sliced
  • 1 onion, cut into wedges
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400Β°F (200Β°C) and line a sheet pan with parchment paper.
  2. In a large bowl, toss the sliced kielbasa, potatoes, bell pepper, onion, and broccoli with olive oil, garlic powder, salt, and pepper until evenly coated.
  3. Spread the mixture evenly on the prepared sheet pan.
  4. Bake in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and the kielbasa is browned.
