- 1 pound flank steak
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 8 small corn tortillas
- 2 cups fresh corn kernels
- 1/2 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 jalapeno, seeded and diced
- Juice of 2 limes
- 1/2 cup cotija cheese, crumbled
Instructions
- Preheat grill to medium-high heat.
- In a bowl, mix olive oil, chili powder, cumin, salt, and pepper. Rub the mixture onto the steak.
- Grill the steak for 4-5 minutes per side for medium-rare. Let rest, then slice thinly.
- For the street corn topping, combine corn, red onion, cilantro, jalapeno, lime juice, and cotija cheese in a bowl.
- Warm the tortillas on the grill for 30 seconds per side.
- Assemble tacos by placing steak slices on tortillas and topping with street corn mixture.
Notes
For a spicier version, add more jalapeno or use spicy cheese. Serve with avocado slices for extra creaminess.
