Description

These easy steak tacos feature grilled steak topped with a fresh street corn salad, perfect for a quick weeknight meal.


Ingredients

  • 1 pound flank steak
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 2 cups fresh corn kernels
  • 1/2 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 jalapeno, seeded and diced
  • Juice of 2 limes
  • 1/2 cup cotija cheese, crumbled

Instructions

  1. Preheat grill to medium-high heat.
  2. In a bowl, mix olive oil, chili powder, cumin, salt, and pepper. Rub the mixture onto the steak.
  3. Grill the steak for 4-5 minutes per side for medium-rare. Let rest, then slice thinly.
  4. For the street corn topping, combine corn, red onion, cilantro, jalapeno, lime juice, and cotija cheese in a bowl.
  5. Warm the tortillas on the grill for 30 seconds per side.
  6. Assemble tacos by placing steak slices on tortillas and topping with street corn mixture.

Notes

For a spicier version, add more jalapeno or use spicy cheese. Serve with avocado slices for extra creaminess.
