A simple and flavorful dish featuring marinated chicken skewers grilled to perfection with a homemade teriyaki glaze.
Ingredients

- 1.5 pounds boneless chicken thighs, cut into 1-inch cubes
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 onion, cut into chunks
- 8 skewers, soaked in water if wooden
Instructions
- In a bowl, whisk together soy sauce, brown sugar, rice vinegar, garlic, and ginger to make the teriyaki sauce.
- Add the chicken cubes to the sauce and marinate for at least 30 minutes in the refrigerator.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, bell peppers, and onion onto the skewers.
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- Brush with additional teriyaki sauce during the last few minutes of grilling.
- Remove from the grill and let rest for 5 minutes before serving.
Notes
For a vegetarian version, substitute chicken with tofu or vegetables. Ensure skewers are not overcrowded for even cooking.
