- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract

Instructions
- Preheat oven to 375Β°F (190Β°C). Line a 10×15 inch jelly roll pan with parchment paper.
- In a bowl, beat eggs for 5 minutes until thick and lemon-colored. Gradually add sugar and vanilla extract.
- Sift together flour, baking powder, and salt; fold into the egg mixture.
- Spread batter evenly into prepared pan. Bake for 10-12 minutes or until the cake springs back when touched.
- Dust a clean kitchen towel with powdered sugar. Invert the cake onto the towel and peel off the parchment paper.
- Starting at the short end, roll up the cake in the towel. Cool completely on a wire rack.
- For the filling, beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
- Unroll the cake and spread the filling evenly. Reroll the cake without the towel.
- Refrigerate for at least 1 hour. Dust with powdered sugar and add sprinkles before serving.
Notes
Ensure the cake is fully cooled before adding the filling to prevent it from cracking. Store in an airtight container.
