Ingredients

  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Red and green sprinkles for decoration

Instructions

  1. Preheat oven to 375Β°F (190Β°C). Line a 10×15 inch jelly roll pan with parchment paper.
  2. In a bowl, beat eggs for 5 minutes until thick and lemon-colored. Gradually add sugar and vanilla extract.
  3. Sift together flour, baking powder, and salt; fold into the egg mixture.
  4. Spread batter evenly into prepared pan. Bake for 10-12 minutes or until the cake springs back when touched.
  5. Dust a clean kitchen towel with powdered sugar. Invert the cake onto the towel and peel off the parchment paper.
  6. Starting at the short end, roll up the cake in the towel. Cool completely on a wire rack.
  7. For the filling, beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  8. Unroll the cake and spread the filling evenly. Reroll the cake without the towel.
  9. Refrigerate for at least 1 hour. Dust with powdered sugar and add sprinkles before serving.

Notes

Ensure the cake is fully cooled before adding the filling to prevent it from cracking. Store in an airtight container.
