Ingredients

  • 8 ounces penne pasta
  • 1/2 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/4 cup chopped red onion
  • 1/4 cup sliced almonds
  • 2 tablespoons olive oil
  • 2 tablespoons orange juice
  • 1 tablespoon white vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions until al dente; drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, feta cheese, dried cranberries, red onion, and sliced almonds.
  3. In a small bowl, whisk together olive oil, orange juice, white vinegar, honey, salt, and pepper to make the vinaigrette.
  4. Pour the vinaigrette over the pasta mixture and toss gently to coat.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes
