Fiesta Lime Chicken with Avocado Salsa

Description

Grilled chicken marinated in lime and spices, topped with fresh avocado salsa and a drizzle of lime crema. A zesty, flavorful main dish perfect for any fiesta.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro
  • 2 ripe avocados, diced
  • 1/2 cup cherry tomatoes, quartered
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons chopped cilantro
  • Salt to taste

Instructions

  1. In a bowl, whisk together olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, pepper, and cilantro. Place chicken in a resealable bag or dish and pour marinade over. Refrigerate for at least 30 minutes.
  2. Preheat grill or grill pan over medium-high heat. Remove chicken from marinade and grill 6-7 minutes per side, or until internal temperature reaches 165°F. Let rest 5 minutes.
  3. Meanwhile, make avocado salsa: combine avocados, tomatoes, onion, jalapeño, lime juice, cilantro, and salt in a bowl; gently toss.
  4. Serve chicken topped with avocado salsa.

Notes

For extra flavor, add a squeeze of lime before serving. Great with rice or tortillas. Marinating time is not included in prep time.
