- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup fresh lime juice (about 2 limes)
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- 2 ripe avocados, diced
- 1/2 cup cherry tomatoes, quartered
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and minced
- 2 tablespoons fresh lime juice
- 2 tablespoons chopped cilantro
- Salt to taste
Instructions
- In a bowl, whisk together olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, pepper, and cilantro. Place chicken in a resealable bag or dish and pour marinade over. Refrigerate for at least 30 minutes.
- Preheat grill or grill pan over medium-high heat. Remove chicken from marinade and grill 6-7 minutes per side, or until internal temperature reaches 165°F. Let rest 5 minutes.
- Meanwhile, make avocado salsa: combine avocados, tomatoes, onion, jalapeño, lime juice, cilantro, and salt in a bowl; gently toss.
- Serve chicken topped with avocado salsa.
Notes
For extra flavor, add a squeeze of lime before serving. Great with rice or tortillas. Marinating time is not included in prep time.
