Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 cup diced fresh peaches
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  2. In another bowl, beat the eggs, then add milk, melted butter, and vanilla extract; mix well.
  3. Combine the wet and dry ingredients, stirring until just mixed; fold in the diced peaches.
  4. Heat a griddle or skillet over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup of batter for each pancake and cook until bubbles form on the surface, about 2-3 minutes.
  6. Flip and cook for another 1-2 minutes until golden brown.
  7. Serve warm with additional peaches or syrup if desired.

Notes

For extra flavor, use ripe peaches and add a pinch of nutmeg. Store leftovers in the fridge for up to 2 days.
