- 2 cups milk
- 2 large eggs
- 1/4 cup melted butter
- 1 cup diced fresh peaches
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, beat the eggs, then add milk, melted butter, and vanilla extract; mix well.
- Combine the wet and dry ingredients, stirring until just mixed; fold in the diced peaches.
- Heat a griddle or skillet over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter for each pancake and cook until bubbles form on the surface, about 2-3 minutes.
- Flip and cook for another 1-2 minutes until golden brown.
- Serve warm with additional peaches or syrup if desired.
Notes
For extra flavor, use ripe peaches and add a pinch of nutmeg. Store leftovers in the fridge for up to 2 days.
