Ingredients

  • 4 bone-in pork chops
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • 1/2 cup red wine
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 tablespoon flour (for thickening)

Instructions

  1. Season the pork chops with salt, pepper, and thyme.
  2. Heat olive oil in a skillet over medium heat and sear the pork chops on both sides until browned.
  3. Remove pork chops and set aside. In the same skillet, add sliced onions and garlic, cooking until caramelized.
  4. Stir in flour to make a roux, then add beef broth and red wine, bringing to a simmer.
  5. Return pork chops to the skillet, cover, and simmer for 20-25 minutes until cooked through.
  6. Serve hot, smothered in the onion sauce.

Notes

For a deeper flavor, use bone-in chops and let them marinate for 30 minutes before cooking. Pair with steamed vegetables.
