Ingredients

- 1 fresh pineapple, peeled and sliced
- 1 cup shredded coconut
- 1/2 cup flour
- 2 eggs, beaten
- Oil for frying
Instructions
- Slice the pineapple into rings.
- Dredge each ring in flour, then dip in beaten eggs, and coat with shredded coconut.
- Heat oil in a pan over medium heat.
- Fry the coated pineapple rings until golden brown on both sides.
- Drain on paper towels and serve hot.
