Description

A delicious tropical treat with a crispy coconut crust, perfect for summer.


Ingredients

  • 1 fresh pineapple, peeled and sliced
  • 1 cup shredded coconut
  • 1/2 cup flour
  • 2 eggs, beaten
  • Oil for frying

Instructions

  1. Slice the pineapple into rings.
  2. Dredge each ring in flour, then dip in beaten eggs, and coat with shredded coconut.
  3. Heat oil in a pan over medium heat.
  4. Fry the coated pineapple rings until golden brown on both sides.
  5. Drain on paper towels and serve hot.

Notes

Serve with a side of vanilla ice cream for an extra treat.
