- Cod Strips:
- 1 1/2 lbs cod fillets
- 1/2 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- Sweet Chili Lime Sauce:
- 1/3 cup sweet chili sauce
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1/4 cup fresh cilantro, chopped
Instructions
- Pat the cod fillets dry with paper towels and cut into 1-inch strips.
- In a shallow bowl, whisk together flour, garlic powder, paprika, salt, and black pepper.
- Dredge each cod strip in the flour mixture, shaking off any excess.
- In a large skillet over medium-high heat, melt butter. Add minced garlic and cook for 30 seconds until fragrant.
- Place the cod strips in the skillet in a single layer, cooking in batches if needed. Cook for 2-3 minutes per side, until golden brown and fish flakes easily with a fork. Avoid overcrowding.
- Remove cod strips to a plate and sprinkle with fresh parsley.
- In a small bowl, stir together sweet chili sauce, lime juice, lime zest, and cilantro to make the sauce.
- Serve the garlic butter cod strips warm with the sweet chili lime sauce on the side.
Notes
You may substitute cod with haddock, halibut, or tilapia. Make sure to pat the fish very dry before dredging so the coating adheres and the fish fries up crisp. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a skillet.
