- 3 tablespoons unsalted butter
- 4 cloves garlic, minced

- 1/2 teaspoon smoked paprika
- 1 tablespoon fresh parsley, chopped
- For the Parmesan Mashed Potatoes:
- 2 lbs Yukon Gold potatoes, peeled and quartered
- 4 tablespoons unsalted butter, softened
- 1/2 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chives, chopped (optional)
Instructions
- Make the Mashed Potatoes:
- Place potatoes in a large pot and cover with cold salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes.
- Drain potatoes and return to pot. Mash until smooth.
- Add softened butter, heavy cream, Parmesan, salt, and pepper. Stir until creamy and well combined. Keep warm.
- Cook the Steak Bites:
- Pat steak cubes dry with paper towels. Season with salt, pepper, and smoked paprika.
- Heat olive oil in a large skillet over high heat. Add steak cubes in a single layer (work in batches if needed). Sear for 2-3 minutes per side until browned.
- Reduce heat to medium. Add butter and minced garlic. Stir to coat steak, cooking for 1-2 minutes until garlic is fragrant.
- Remove from heat. Stir in fresh parsley.
- To Serve:
- Divide Parmesan mashed potatoes among plates. Top with garlic butter steak bites and any pan juices. Garnish with chives if desired.
Notes
For best results, use a high-quality cut of steak like sirloin or ribeye. Ensure the skillet is very hot to get a good sear. You can substitute heavy cream with half-and-half for lighter mashed potatoes.
