Description

These garlic butter zucchini skewers are a quick and easy side dish, perfect for grilling season. The zucchini is brushed with a flavorful garlic butter and grilled until tender and slightly charred.


Ingredients

  • 4 medium zucchinis, sliced into 1/2-inch rounds
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Preheat grill to medium-high heat (about 400°F / 200°C).
  2. In a small bowl, combine melted butter, minced garlic, salt, and pepper.
  3. Thread zucchini slices onto skewers (if using wooden skewers, soak them in water for 30 minutes first).
  4. Brush the garlic butter mixture generously over both sides of the zucchini skewers.
  5. Grill for 4-5 minutes per side, until tender and grill marks appear.
  6. Remove from grill, brush with remaining butter mixture, and sprinkle with parsley and lemon juice if desired. Serve immediately.

Notes

You can substitute regular butter with vegan butter or olive oil. For extra flavor, add a pinch of red pepper flakes or smoked paprika to the butter mixture. If using metal skewers, no soaking needed.
