Description

A flavorful dish featuring tender chicken seasoned with garlic and herbs, served alongside creamy mashed potatoes and sweet, glazed carrots.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh herbs (such as thyme, rosemary, and parsley), chopped
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1 pound carrots, peeled and sliced
  • 2 tablespoons honey
  • 1 tablespoon brown sugar

Instructions

  1. Preheat oven to 375Β°F (190Β°C).
  2. In a bowl, mix olive oil, minced garlic, fresh herbs, salt, and pepper.
  3. Rub the mixture over the chicken breasts and place them in a baking dish.
  4. Bake for 25-30 minutes or until chicken reaches 165Β°F internal temperature.
  5. While chicken bakes, boil potatoes in salted water until tender, about 15 minutes. Drain and mash with milk and butter until smooth.
  6. In a skillet, combine sliced carrots, honey, brown sugar, and a bit of water. Cook over medium heat until carrots are tender and glazed, about 10-15 minutes.
  7. Serve the baked chicken with a side of mashed potatoes and glazed carrots.

Notes

For best results, use fresh herbs. Ensure the chicken is fully cooked to avoid foodborne illness.
