- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh herbs (such as thyme, rosemary, and parsley), chopped
- Salt and pepper to taste
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 2 tablespoons butter
- 1 pound carrots, peeled and sliced
- 2 tablespoons honey
- 1 tablespoon brown sugar
Instructions
- Preheat oven to 375Β°F (190Β°C).
- In a bowl, mix olive oil, minced garlic, fresh herbs, salt, and pepper.
- Rub the mixture over the chicken breasts and place them in a baking dish.
- Bake for 25-30 minutes or until chicken reaches 165Β°F internal temperature.
- While chicken bakes, boil potatoes in salted water until tender, about 15 minutes. Drain and mash with milk and butter until smooth.
- In a skillet, combine sliced carrots, honey, brown sugar, and a bit of water. Cook over medium heat until carrots are tender and glazed, about 10-15 minutes.
- Serve the baked chicken with a side of mashed potatoes and glazed carrots.
Notes
For best results, use fresh herbs. Ensure the chicken is fully cooked to avoid foodborne illness.
