- For the Chicken:
- 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- For the Pasta:
- 12 oz spaghetti
- For the Sauce:
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1–2 tbsp Cajun seasoning (adjust to taste)
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional)
- Salt and pepper to taste
- For Garnish:
- Fresh parsley, chopped
- Extra Parmesan cheese
Instructions
- Cook spaghetti according to package directions until al dente. Drain and set aside.
- Season chicken pieces with salt, pepper, and a pinch of Cajun seasoning.
- In a large skillet, heat olive oil over medium-high heat. Cook chicken until golden and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, melt butter over medium heat. Add garlic and sauté for 1 minute.
- Whisk in flour and cook for 1 minute to form a roux.
- Gradually pour in heavy cream and chicken broth, whisking constantly to avoid lumps.
- Bring to a simmer and let thicken slightly, about 3-4 minutes.
- Stir in Parmesan cheese until melted. Add Cajun seasoning, paprika, cayenne, and season with salt and pepper.
- Add cooked chicken and spaghetti to the sauce. Toss to coat evenly.
- Serve hot, garnished with parsley and extra Parmesan.
Notes
For extra spice, increase the Cajun seasoning or add diced jalapeños. You can use half-and-half instead of heavy cream for a lighter sauce.
