Description
Crispy baguette crostini are slathered with creamy whipped goat cheese and topped with syrupy roasted blackberries, hot honey, and a crunchy pistachio finish. An easy, impressive appetizer for any gathering.

- 1 (12-inch) baguette, cut into 1/2-inch-thick slices
- 3 tablespoons olive oil, divided
- 8 ounces goat cheese, at room temperature
- 4 ounces cream cheese, at room temperature
- 2 tablespoons honey, divided
- 1 teaspoon kosher salt, divided
- 1/4 teaspoon freshly ground black pepper
- 6 ounces fresh blackberries
- 1 tablespoon balsamic vinegar
- 1/2 cup shelled pistachios, finely chopped
- 1/4 cup hot honey
- 1 tablespoon fresh thyme leaves, for garnish
Instructions
- Preheat the oven to 400°F.
- On a rimmed baking sheet, toss the baguette slices with 2 tablespoons olive oil and a pinch of salt. Arrange in a single layer and season with black pepper.
- Toast the crostini for 8 to 10 minutes, until golden and crisp. Set aside to cool.
- In a small baking dish, combine the blackberries, 1 tablespoon honey, balsamic vinegar, remaining 1 tablespoon olive oil, and a pinch of salt.
- Roast the blackberries for 12 to 15 minutes, until soft and syrupy.
- Meanwhile, make the whipped goat cheese: In a medium bowl, beat the goat cheese, cream cheese, remaining 1 tablespoon honey, and remaining salt together until smooth, light, and whipped, about 2 to 3 minutes.
- Make the pistachio crunch: In a small skillet over medium heat, toast the pistachios with a pinch of salt until fragrant and lightly golden, about 3 minutes. Remove from heat.
- To assemble, spread each crostini with whipped goat cheese, top with roasted blackberries, drizzle with hot honey, and sprinkle with the pistachio crunch and fresh thyme leaves.
- Serve immediately.
Notes
Whipped goat cheese and roasted blackberries can be prepared up to one day in advance. Store them separately in airtight containers in the refrigerator and assemble just before serving. If you don’t have hot honey, warm 1/4 cup honey with 1/4 to 1/2 teaspoon red pepper flakes and let it steep for 5 minutes.
