  • 2 cups cooked quinoa or brown rice
  • 1 cucumber, sliced
  • 1 red bell pepper, sliced
  • 1 cup shredded carrots
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • For the Creamy Chili Drizzle:
  • 1/2 cup plain Greek yogurt (or mayonnaise for dairy-free)
  • 2 tbsp sriracha or chili garlic sauce
  • 1 tbsp lime juice
  • 1 tsp honey or agave
  • Salt to taste

Instructions

  1. 1. In a bowl, combine chicken pieces with turmeric, garlic powder, paprika, salt, and pepper. Toss to coat evenly.
  2. 2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through, about 6-8 minutes. Set aside.
  3. 3. Prepare the creamy chili drizzle: In a small bowl, whisk together Greek yogurt, sriracha, lime juice, honey, and a pinch of salt. Adjust spice to taste.
  4. 4. Assemble bowls: Divide cooked quinoa or rice among bowls. Top with cucumber, bell pepper, shredded carrots, avocado slices, and the cooked golden chicken.
  5. 5. Drizzle generously with the creamy chili sauce and garnish with fresh cilantro. Serve immediately.

Notes

For a spicier drizzle, add extra sriracha or a pinch of cayenne. Make it vegan by using tofu or chickpeas instead of chicken and a dairy-free yogurt.
