Description
Marinated chicken with herbs and lemon, served in gyros with homemade tzatziki sauce.
Ingredients

- 2 pounds chicken thighs, boneless and skinless
- 1/4 cup olive oil
- Juice of 2 lemons
- 4 garlic cloves, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- For the tzatziki:
- 1 cup Greek yogurt
- 1 cucumber, grated and drained
- 2 garlic cloves, minced
- 1 tablespoon fresh dill, chopped
- Salt to taste
- For assembly:
- Pita bread
- Sliced tomatoes
- Sliced onions
- Lettuce leaves
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper to make the marinade.
- Add the chicken thighs to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat a grill or grill pan over medium-high heat.
- Grill the chicken for 5-7 minutes per side, or until fully cooked and juices run clear. Let rest for 5 minutes, then slice into strips.
- For the tzatziki, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, and salt in a bowl. Mix well and refrigerate until ready to use.
- Warm the pita bread on the grill for 1-2 minutes.
- Assemble the gyros by placing chicken strips, tzatziki, tomatoes, onions, and lettuce inside the pita bread.
- Serve immediately.
Notes
For a vegetarian version, substitute chicken with grilled vegetables. Ensure chicken reaches an internal temperature of 165Β°F.
