Greek Chicken Gyros with Lemon Herb Marinade and Tzatziki

Description

Marinated chicken with herbs and lemon, served in gyros with homemade tzatziki sauce.


Ingredients

  • 2 pounds chicken thighs, boneless and skinless
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 4 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the tzatziki:
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 2 garlic cloves, minced
  • 1 tablespoon fresh dill, chopped
  • Salt to taste
  • For assembly:
  • Pita bread
  • Sliced tomatoes
  • Sliced onions
  • Lettuce leaves

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper to make the marinade.
  2. Add the chicken thighs to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Grill the chicken for 5-7 minutes per side, or until fully cooked and juices run clear. Let rest for 5 minutes, then slice into strips.
  5. For the tzatziki, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, and salt in a bowl. Mix well and refrigerate until ready to use.
  6. Warm the pita bread on the grill for 1-2 minutes.
  7. Assemble the gyros by placing chicken strips, tzatziki, tomatoes, onions, and lettuce inside the pita bread.
  8. Serve immediately.

Notes

For a vegetarian version, substitute chicken with grilled vegetables. Ensure chicken reaches an internal temperature of 165Β°F.
