Description

Delicious Greek-inspired turkey meatballs served with flavorful lemon herb rice.


Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • For the rice:
  • 1 cup rice
  • 2 cups chicken broth
  • Zest of 1 lemon
  • 1 tbsp fresh herbs (like parsley and dill)

Instructions

  1. Preheat oven to 400Β°F.
  2. In a bowl, mix ground turkey, breadcrumbs, onion, garlic, oregano, cumin, salt, and pepper.
  3. Form into meatballs and place on a baking sheet.
  4. Bake for 20-25 minutes until cooked through.
  5. For the rice:
  6. In a pot, bring chicken broth to a boil.
  7. Add rice, lemon zest, and herbs.
  8. Simmer for 15-20 minutes until rice is tender.

Notes

Great for meal prep; serve with a side of yogurt sauce for extra flavor.
