Ingredients

- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- Salt and pepper to taste
- For the rice:
- 1 cup rice
- 2 cups chicken broth
- Zest of 1 lemon
- 1 tbsp fresh herbs (like parsley and dill)
Instructions
- Preheat oven to 400Β°F.
- In a bowl, mix ground turkey, breadcrumbs, onion, garlic, oregano, cumin, salt, and pepper.
- Form into meatballs and place on a baking sheet.
- Bake for 20-25 minutes until cooked through.
- For the rice:
- In a pot, bring chicken broth to a boil.
- Add rice, lemon zest, and herbs.
- Simmer for 15-20 minutes until rice is tender.
Notes
Great for meal prep; serve with a side of yogurt sauce for extra flavor.
