Description

A summery twist on classic Caprese salad, these skewers combine ripe peaches, fresh mozzarella pearls, and basil, drizzled with hot honey and mint. Perfect for a quick appetizer or light meal.


Ingredients

  • 2 ripe peaches, cut into 1-inch wedges
  • 8 oz fresh mozzarella pearls (bocconcini), drained
  • 1/4 cup fresh basil leaves
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 cup hot honey (or regular honey mixed with a pinch of red pepper flakes)
  • 2 tablespoons fresh mint leaves, finely chopped
  • Salt and black pepper to taste
  • Wooden skewers (soaked in water for 30 minutes if grilling)

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a small bowl, whisk together olive oil and balsamic vinegar. Season with salt and pepper.
  3. Thread a peach wedge, a basil leaf, and a mozzarella pearl onto each skewer, repeating as desired. Aim for 2-3 of each per skewer.
  4. Brush the skewers with the oil-vinegar mixture.
  5. Heat a grill or grill pan over medium-high heat. Grill skewers for 2-3 minutes per side, until peaches are lightly charred and mozzarella begins to soften.
  6. Transfer skewers to a serving platter. Drizzle evenly with hot honey and sprinkle with chopped mint.
  7. Serve warm or at room temperature.

Notes

Can substitute regular honey plus a pinch of cayenne for hot honey. For a vegetarian version, ensure honey is plant-based (use agave). Skewers can also be baked at 400°F for 8-10 minutes if no grill available.
