- 1 1/2 pounds salmon fillet
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- For the avocado salsa:
- 1 ripe avocado, diced
- 1/2 cup cherry tomatoes, quartered
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions
- Preheat grill to medium-high heat.
- Season salmon with olive oil, salt, pepper, and garlic powder.
- Grill salmon skin-side down for 4-5 minutes. Flip and grill another 3-4 minutes until cooked through.
- While salmon grills, prepare avocado salsa: In a bowl, combine avocado, tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Gently mix.
- Serve salmon topped with a generous spoonful of avocado salsa.
Notes
For best results, do not overcook the salmon. The salsa can be made ahead and refrigerated for up to 2 hours.
