Description

A vibrant salad featuring grilled zucchini, hearty chickpeas, creamy burrata, and a spicy chili oil drizzle.


Ingredients

Scale
  • 2 medium zucchinis, sliced lengthwise
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 ball (8 oz) burrata cheese
  • 2 tablespoons chili oil
  • 1/4 cup fresh basil leaves
  • 1/4 cup red onion, thinly sliced
  • Salt and pepper to taste
  • 2 tablespoons olive oil for grilling

Instructions

  1. Preheat grill to medium-high heat.
  2. Brush zucchini slices with olive oil and season with salt and pepper.
  3. Grill zucchini for 3-4 minutes per side until tender and charred.
  4. In a large bowl, combine grilled zucchini, chickpeas, red onion, and basil.
  5. Drizzle with chili oil and toss gently.
  6. Top with burrata cheese and serve immediately.

Notes

For a spicier version, add more chili oil. This salad is best enjoyed fresh.
