Ingredients

- 2 medium zucchinis, sliced lengthwise
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 ball (8 oz) burrata cheese
- 2 tablespoons chili oil
- 1/4 cup fresh basil leaves
- 1/4 cup red onion, thinly sliced
- Salt and pepper to taste
- 2 tablespoons olive oil for grilling
Instructions
- Preheat grill to medium-high heat.
- Brush zucchini slices with olive oil and season with salt and pepper.
- Grill zucchini for 3-4 minutes per side until tender and charred.
- In a large bowl, combine grilled zucchini, chickpeas, red onion, and basil.
- Drizzle with chili oil and toss gently.
- Top with burrata cheese and serve immediately.
Notes
For a spicier version, add more chili oil. This salad is best enjoyed fresh.
